In the previous paper, we talked about the infusion mashing method, now, let’s have a look at another mashing method: decoction mashing

一: Definition
Decoction mashing means make part of mash heated to boiling point, and then mix them with other mash. By mixing, the temperature of all the mash could be increased to separated step needed temp. And finally, up to the lauter temp.

二: Classification
According to the whether there accessories is used in mashing: single mash decoction mashing and double mash decoction mashing.
According to times to divide the mash: one time decoction, two times decoction and three time decoction.

Now, let have a overview for single mash three time decoction mashing.
Characteristic: Part of mash will be conducted three times’ boiling. In our whole mashing process, the temp increase gently, which is beneficial for promoting the enzyme and dissolving material.
Disadvantage: Production cost is higher due to too much boiling time, too long working time, and too much energy consumption. At the same time, facility utilization is too less.
