Hops composition& property and its adding
There are female and male hops difference,but in the beer brewing,it uses female hops into the wort.The most important composition in the hops is hop resin,hops oil and polyphenols,those composition give the beer special bitterness and aroma.Besides,hop resin have the antiseptic ability,and polyphenols have the function on clearing the wort and mellow beer.
The tradition adding hops into beer use the whole hops,but this kind of method is not to economic,the utilize ratio of the whole hops composition is just one around 30%.In order to improve the hops utilization and convenient transportation and storage,people have researched several hops production.At current,the popular hops production mainly is pellet hops,Hop extract and hops oil.
In the world,the most hops production countries is USA,German,UK and Czech Republic,their production amount is about 80% of the world total production.in the quality of the hops,German and Czech Republic is famous for their aroma hops.
During brewing process,hops adding time as below
1.wort boiling 10minutes at initial boiling stage,adding the first time.ts adding amount is about 20% of the total hops
2.After boiling 20-30 minutes later,adding the second time hops,its adding amount is about 45% of the total hops
3.At the end of boiling stage,before ending boiling 10 minutes,adding the rest 35& hops into the wort.
