How to recycle and discharge yeast in conical fermenter tank?

The recycling work is relatively simple in the conical fermentation tanks, generally recycled after the Diacetyl finished reduction and the fermenting liquid reduced to about 4℃.

To ensure enough time for recycling, the temperature at 4 ℃ better being kept for 48h, that is good for the yeast sedimentation. The yeast paste should be recycled or discharged in time after entered the temperature reduction period. As now plenty of yeast would settled to the bottom cone, that may makes the temperature sensor cannot reflect the correct temperature inside and not convenient for the temperature controlling.

There are not only one method for yeast recycling, some breweries may wash the recyclable yeast and store it in sterilized water at lower temperature (0~2℃), and add yeast after metering. Some breweries may discharge the yeast from conical tank to yeast feeder directly and then add the yeast to the wort of next batch.

The recycled yeast should be performance tested and inspected, the seriously variant or polluted yeast cannot be used any more. The waste yeast should be discharged on time. You know if the yeast stay long time at bottom cone, the pressure inside would make the yeast died or autolytic, which may influence the beer flavour.
