With the beer type becoming various, many beer forms their own unique foam, color, aroma, flavor and mouthfeel. It means we should add some special malt to stand out it’s character when brewing. We called these malt as “Special malt”. Special malt can give beer unique character and influence the brewing process, color, aroma and stability etc.

In China, the special malt is divided into colored malt and uncolored malt. The common colored malt includes roasting malt and dark malt etc, which has deep color & special aroma and weak enzyme activity. For uncolored malt, it is mainly used for adjusting the wort character to improve beer quality. Uncolored malt has light color and stronger enzyme activity, such as wheat malt, lactic acid malt etc.
