The factors which can influence beer clarify

Beer clarify is the process of suspended solids sediment during maturing period. The purpose is aim to make filter smoothly; reduce filter loss, the beer after filtration have low turbidity, good stability and longer shell life time. The suspends mainly are yeast cell, cold coagulating protein, hop resin as well as protein polyphenol complex. All of these will be settled along with lower maturing period and longer storage time, thus make the beer clarify. While if the beer reach to clear and transparent, glossy, it still need deal by mechanical to remove fine particles.

The main factors which can influence beer clarify as follows:

1)The character of sediments
The yeast sediment speed mainly depends on yeast cohesiveness. Stronger one have fast sediment speed, which good for beer clarify. Protein and hop resin precipitate is small at start, the particles will bigger further by contact and adsorption, then sediment gradually. Cold and permanent turbidity is not easy to precipitate within shortage time, while if the particles at early period and remove during filtration, which is very good for beer storage.

2)Storage temperature
Beer clarify is faster with higher temperature ( above 3℃) then lower temperature ( below zero).
Because cold turbidity precipitate is less with higher temperature, but the shell lifetime also is short. With more lower storage temperature, more particles precipitate, thought beer clarify is not well like at high temperature, but it can remove the suspends during filtration. It is very good for beer shell lifetime. So, cooling the beer to -1.5℃( close to freeze point) with cooler machine before filtration, try best to precipitate cold turbidity, thus improve beer abiotic stability.

3)PH
If beer PH at 4.2-4.4, which is good for beer sediment and clarify. Bottom fermenting beer PH normally at 4.0-4.5, clarify is faster; top fermenting beer PH slight lower, which can reach to below 4.0, clarify is slower.

4)Tanks capacity
If beer tanks diameter over big, internal beer temperature is not easy to settle faster, which will influence suspends precipitate, coagulation and settlement; The sediment is not easy to drain to bottom for higher tanks, which is slower compare with lower tanks. So smaller capacity tanks will good for beer clarify. For bigger capacity tanks, it is not reasonable to cool beer temperature by room temperate cooling, but with cooling jacket or heat exchange to make circulation, or transfer to another tank after cooling.

5)Beer Viscosity
High viscosity beer with slower clarify speed, it also will influence beer filtration if over high. The reasons result in beer with high viscosity mainly are β-glucan, polymer nitrogen and dextrin with high amount, which have direct matters on raw material and mashing method. It normally have such situation with not well dissolved malt and β-glucan insufficient decomposition mashing method
