The process to transfer the beer to brite tank

Step 1: Delivery
There is main two delivery method for green beer
Method 1: Top delivery. The green beer is delivered by the top co2 blow-off port. In this way, the beer is easy to produce extra roam, and touch too much oxygen. At the same time, it is not easy for us to control the top space inside the tank. So, this way is not recommended.
Method 2: Bottom delivery. The green beer is delivered by beer outlet at bottom. This way is recommended as it could avoid the above questions.

Step 2: Seal the tank
After finish the delivery, normally, we need to conduct the open fermentation for 2-3days to get rid of substance which give a green taste to beer. Normally, after 24 hours for delivery, the top hole will be found white bubble. Several days later, the bubble turns small and yellow. In this time, seal the tank and put the pressure gauge in top tank. And keep the pressure 0.05~0.08MPa. Gradually, the pressure inside will increase due to produced co2.

Step3: Temperature control
We usually control the secondary temperature by cooling jacket. In the first stage, the temperature control is not very stable, we could adjust it between 3~13℃ for decreasing the diacetyl content. In the later stage, we need to keep it storage in -1~0℃ for 7~14days for CO2 saturation and clear beer.
