The storage of recycled yeast

Today, the recycled yeast mostly saved in Yeast recycling tank, its capacity could support 2~3 batches of yeast at same generation. The recycling tank mostly with agitator and cooling device.The recycled yeast could be washed or without washing. It is available to be washed with acid if the yeast mixed with bacterium.

The yeast should be cooled once the recycling is over, and stopped cooling when the temperature reached 5℃. And then lower the temperature to 2℃ by indirect cooling, with circulating at the same time. The yeast basically under a dormant state in this temperature. For better mixing uniformity, the circulating could be cone once a day,5-10min each time.

When the yeast is cooled, the pressure of the tank should also be reduced at the same time, and prevented the bubble overflow. ( The storage temperature of yeast better at 0-2℃, better not exceed 3℃)
