The two stage heat exchanger generally included the front and back part, and with a middle plate between them. The front stage cooled with cold water/ city water. The back stage cooled with coolant.

Generally the temperature of the first stage water cannot exceed 20 celsius, it will reduce the wort temperature to 40-50 celsius after cooling; The temrperature of the coolant generally at -3~-4 celsius, it will reduce the wort temperature to fermentation temperature. And the water of first stage can also be recycled as brewing water.

The heat exchanger with resistance at about 0.25-0.35Mpa, both of the wort and coolant need being pumped in, and the cooling process better within 1 hour. So it is better if the heat exchanger with a bigger capacity.

When the wort cooling is finished, the heat exchanger must be recirculated by hot water and caustic water, that will helped cleaning and sterilization.
