What factors will affect beer’s flavor stability
In whole beer production process, almost every operation process will affect the flavour stability of beer more or less, while flavor of beer is exactly most sensitive part for customers.

Following is a simple list that may affect beer flavour stability:
1.Malt( Variety, Origin, Year)
2.Malting(Germination/Dry temp, Oxygen)
3.Mash(Temp, PH, Oxygen)
4.Boiling(Temp, Time, Evaporation)
5.Hops
6.Whirlpool process(time)
7.Yeast (vitality)
8.Fermenting temp
9.Packing(Oxygen)

The change of beer flavour is mainly result from oxidation of wort and beer. Oxidation is reacted between beer and air Oxygen and produce a unpleasant aging taste(similar as smell of bread and caramel) with higher temperature and better complete reaction. So, oxygen is the main destroyer in beer production.Except for Oxygen, sunshine and intense shake will also affect taste flavour of beer, producing aging taste.So, beer is better to be packed in brown bottle and placed in where no strong sunlight. And long term transportation is also not a good choice.
