What We Should note during boiling in brewing kettles of brewhouse
 
Wort boiling process is one of most important process we need note. In a micro brewery, boiling process usually happened in brewing kettles of brewhouse. So, what we need to note during boiling process? Let’s check it together.

1. Steam capacity
Please kindly note the steam capacity of boiling process. If boiling process is too powerful, protein will condense into a hot solidification. But steam also couldn’t be too weak. Otherwise, boiling effect will not be thorough. As for steam capacity, it will depends on brewhouse vessel. Welcome to contact us. We will help to recommend suitable steam capacity to you.

2. Boiling time
Sterilization: 5mins
Break the enzyme: 10mins
Based on different goal of hops. It will also request different boiling time. Bitters hops usually need boiling for 60mins to exact bitterness as much as possible. For aroma hops, 0-15mins is ok.

3. DMS
With different grain, produced DMS is also different. If there is much Pilsen malt. We suggest to extend boiling time to 90mins to reduce the DMS.

4. Wort concentration   
For some dark beer, we suggest to extend the boiling time to increase the wort concentration. Except to higher evaporation capacity, Maillard reaction can also produce more cookies and toast flavour.
