Dent corn is coarsely ground and cooked in hot water to gelatinize the starch. Because corn lacks enzymes, a small portion of malted barley is added during the mash to convert starches into fermentable sugars. The mash rests at around 65°C to 68°C for 60 to 90 minutes.

Traditional recipes sometimes skip barley and use commercial enzymes or rely on added table sugar for fermentation.


2. Fermentation

After cooling, the mash is transferred to a fermenter and pitched with distiller's yeast. Fermentation runs 4 to 7 days, producing a wash of 8% to 12% ABV. The fermented corn mash carries a distinct sweet, sour aroma — the signature precursor to moonshine.

3. Distillation

The fermented mash — often called "distiller's beer" — is distilled in a pot still. Moonshine is almost always produced by single distillation in a pot still, though some modern craft versions run a second pass for smoothness.

The distiller makes cuts: discarding the "heads" (volatile, harsh compounds), collecting the "hearts" (the clean, drinkable spirit), and separating the "tails" (heavy, oily compounds). The hearts are diluted to bottling strength, typically 40% to 50% ABV for legal commercial moonshine.


III. Distillation Methods for Moonshine

1. Single Run Pot Distillation


The traditional moonshine method. The entire fermented mash is distilled once in a pot still. The distiller makes manual cuts to separate heads, hearts, and tails. This produces a bold, rustic spirit with strong corn character and a heavier congener profile.

This is the method associated with classic backcountry moonshine — raw, flavorful, and unmistakably homemade in character.


2. Double Run Pot Distillation


The wash is distilled once to produce low wines (20% to 30% ABV), then redistilled in the same or a second pot still. The second run allows cleaner cuts and a smoother spirit. Many legal craft moonshine producers use this method to meet commercial quality standards while retaining corn identity.

IV. The Pot Still: The Defining Equipment for Moonshine

Unlike column stills that produce neutral spirit, moonshine is defined by the pot still. The pot still preserves flavor, texture, and the raw grain character that makes moonshine recognizable.

1. How a Pot Still Works

A pot still is a batch distillation vessel. The fermented wash is loaded into the pot, heated from below (direct fire, steam jacket, or electric elements). Alcohol and water vapor rise, travel through the swan neck, and condense in a condenser. The distillate is collected in a parrot or graduated receiver where the distiller monitors ABV and makes cuts.

2. Key Components

Still Pot: The main boiler, traditionally copper, now often stainless steel with a copper dome. Typical home and craft sizes range from 50L to 500L; commercial pot stills go up to 1000L+.

Copper Dome and Swan Neck: Copper reacts with sulfur compounds in the vapor, smoothing the spirit. The shape of the neck influences reflux — a taller neck produces a lighter spirit.

Condenser: Commonly a worm-in-bucket (traditional) or shell-and-tube (modern). Cools vapor back to liquid.

Heating Source: Direct fire (propane or wood) for traditional character; steam jacket or electric elements for controllable, repeatable runs.

Parrot and Receiver: Used to measure proof in real time and separate heads, hearts, and tails.


3. Why Pot Still Suits Moonshine

Flavor retention: Pot stills do not strip flavor the way column stills do. The corn sweetness and fermentation character survive.

Batch control: The distiller controls every cut, shaping the final profile.

Simplicity: A pot still is mechanically simple, easy to operate, and accessible to small producers.

Tradition: Moonshine's identity is tied to the pot still. Using anything else changes the category.


V. Choosing a Pot Still for Moonshine

1. Size

Home distillers often use 50L to 100L pot stills. Craft commercial producers start around 200L to 500L. Match size to your fermentation volume and batch frequency.

2. Material

Copper dome with stainless pot is a popular hybrid — copper for flavor, stainless for durability and cost. All-copper stills are traditional but require more maintenance.

3. Heating

Steam jacket heating gives the best temperature control and is safest for indoor installations. Direct fire is cheapest but hardest to control and risky indoors.

4. Legal Note

Always check local regulations. In many countries, distilling spirits at home without a license is illegal. Commercial moonshine requires permits, excise tax registration, and food-grade equipment certification.
