Heat Exchanger Capacity and Cooling Speed during Beer Brewing

During beer brewing, wort cooling is proceed via heat exchanger. For example, in 1000L brewery equipment project, we will equip 10m3 heat exchanger. The designed cooling speed is cooling 1000L craft beer within 30-40mins. Sometime, part of customers hope to shorten the cooling time.
So, is this ok for beer?
Normally, this is not suggested.
1. Rapid cooling can separate out cold break more. If cooling time is too long, it will effect wort chroma.
2. Only by rapid chilling from near-boiling to room temperature, Cold Break proteins will permanently precipitate and not cause Chill Haze. Hazy beer tends to become stale sooner than non-hazy beer.
In cooling, cooling speed can be adjusted via adjusting valves opening angle, pump VFD, cold water temp. Then, you can decide the desired cooling speed. But please don't make it too short or too long.
