How to brew fruit liquor in your brewery

A brewery can be used to brew beer, kombucha, wine, fruit liquor. They have similar brewing process, as well the design of brewery configurations. We (Tiantai) customize various type brewery equipment to meet all your brewing demands.
 
The brewery configurations for brewing fruit liquor is not complicate like beer equipment. They basically need mixing tank, blending tank, glycol chiller, glycol water tank, CIP system. The mixing tank normally with agitator, false bottom, glycol jacket. The blending tank normally with agitator, glycol jacket as well. We can regard it as a bright beer tank with agitator.


 
Here, let’s find out how to brew fruit liquor firstly in your brewery?
1. The customers will get frozen fruit pulp from supplier directly, and drop them into mixing tank to thaw.
2. After waiting for 24 hours, we will add ingredients to fruit pulp and cooling the temperature to 4℃.
3. 7 days later, we will add yeast culture to mixing tank and fermentation at 25℃. The process can be finished from mixing tank directly. We will not drain yeast, or carbonation etc, so it is OK without a cylindrical conical fermenter.
4. After fermentation another 7 days at 25℃, then we can pump the fruit into blending tank, and it is better to add a pipe fitler at the outlet of mixing tank, to strain fermented fruit puree.
From blending tank, we will mix with alcohol and stabilizer, and cooling down the temperature to 4℃.
