Step 1: Malting – Unlocking the Barley’s Potential
It all starts with barley grains, which are soaked in water and allowed to germinate.
This process, called malting, activates natural enzymes that convert starches into fermentable sugars.
After germination, the barley is dried and stored for 6-8 weeks to allow for maturation, ensuring optimal flavor development.

Step 2: Mashing – Where Magic Happens
The crushed malt mix with warm water in a mash tun, creating a porridge-like mixture called mash. Here, enzymes break down proteins and starches into simpler sugars, amino acids, and other essential compounds. Meanwhile, adjuncts like rice or corn are cooked separately to gelatinize their starches before being combined with the malt mash.
Step 3: Lautering & Boiling – Refining the Liquid Gold
After mashing, the liquid (wort) is separated from the grain solids in a process called lautering. The grains are rinsed with hot water to extract every last bit of sugar, ensuring maximum efficiency. The collected wort is then boiled with hops, which add bitterness, aroma, and preservative qualities. Boiling also sterilizes the wort and coagulates unwanted proteins.
Step 4: Fermentation – The Birth of Beer
Once cooled, the wort is transferred to fermentation tanks, where yeast is added. Over 6-10 days, the yeast feasts on the sugars, producing alcohol, carbon dioxide, and a range of flavorful compounds. This primary fermentation is followed by a cold conditioning phase (lagering), lasting from 10 days to 2 months, where the beer matures, clarifies, and develops its smooth, crisp finish.

The final step involves filtering the beer to achieve brilliant clarity before packaging it into bottles, cans, or kegs. Some beers are pasteurized for stability, while others are cold-filtered to preserve fresh flavors.
