3. Natural Preservation
Beyond flavor, hops are beer’s oldest preservative. Hop resins have antibacterial properties that help protect beer from spoilage organisms, making the kettle boil not only a flavor-enhancing step but also a defense mechanism for longer shelf life.
 
4. Clarity and Stability
Ever wondered why some beers stay clearer longer? That’s partly thanks to what happens in the kettle.
Proteins from the malt react with hop polyphenols to form complexes that are later removed, helping ensure your beer stays bright and clean in the glass.
