The brewing progress in a brewery Wort cooling and aeration

In the whole brewing progress, wort aeration is only the place where can access with sterile air. All other brewing step should strictly away from air, in order to avoid oxygenation and influence beer quality. All the microbreweries should pay much more attention on this point.
Equipment intended to the cooling and aeration of wort before the beer fermentation in any brewery.
1) Plate heat exchangers
Plate heat exchangers is standard design for brewhouse equipment, it is used for cooling of hot wort before start the beer fermentation process.
2) Wort aeration candles
The saturation of cold wort with sterilized air or oxygen is usually carried out before or during the beer fermentation process. The aeration candle is equipment for aeration of wort in the pipes before pumping wort into fermenters.
We use plate heat exchanger cool the hot wort to to the desired fermentation temperature. Fermentation temperature depends on the type of beer and yeast type that is used for the beer fermentation process. The operation procedure almost same in any breweries.
Wort is usualy cooled down with iced water or glycol solution which are pre-cooled and stored in the water cooling tanks. There the cooling of water and glycol takes place using the external or integrated cooling unit.
After the wort brew process is very important to cool the wort rapidly to fermentation temperature to prevent oxidation, and then to aerate it to provide the dissolved oxygen that the yeast need in start of the wort fermentation process. Cooling rapidly is important because this temperature region is ideal for bacterial growth to establish itself in the wort. The aeration of the wort is ensured with the porous stone which saturated cooled wort with sterile air during pumping the wort from the brewhouse machine into fermentors.
