The lautering of first wort
The lautering time of first wort is usually 75-105min. If adopting advanced lautering system with excellent rake, the lautering time can be decreased to 60min.
When the wort is bright and clear after circulated lautering, open valves to run wort from lauter tun to brew kettle or grant(buffer tank). In order to keep grain bed loosen, we should guarantee smaller pressure difference. And, it is better to open valve gradually, 1/4-1/3 opening at beginning, then open larger according to the wort clearness.
During lautering, we can start grain rake to loose grain bed so as to improve lautering. But, the speed of rake must be slow, around 1/5-1/3min. And we should adjust the grain rake in suitable height. Keep 3-5cm from false bottom at least. Otherwise, the rake would broke the false bottom during turning. In some advanced commercial brewery, there would be a differential pressure gauge installed, which would adjust the rake speed and height automatically.
After lautering 25-30min, it is time to measure the gravity of first wort, then decide how much sparging water should be added. The first wort gravity must be higher than fermenting wort gravity, higher around 40%-80%. Only in this way can it make sure the final wort gravity. For example, if you want to get 12 Plato beer, the first wort gravity should be 16-20 Plato.
