The reasonable propogation multiple of yeast
The yeast propogation system is very common in commercial brewery.
Firstly, it is because the yeast demand is very high when the brewery capacity is more than 3000L. It with be much economic to propogate the yeast by their workers. And in this way can the brewmaster feel free to take the yeast without any limitation. Secondly, the yeast quality is more reliable if we propogate the yeast in person. Accordingly, the beer quality and flavor could be guaranteed further.
But, about the reasonable propogation multiple, there are various ideas always. Someone advocate 5-10 times while others insists on higher multiples.
We think, during laboratory stage, the propogation multiple can be higher due to high culture temperature, short propogation time and sanitary aseptic conditions, 10-20 times even higher. After Hansen tank, with temperature going down and propogation time increasing, the multiple should be around 5 times so as to keep the growing advantages of yeast.
