What is Coolship used for in beer brewing

A coolship (also known as a koelschip or cool ship) is a traditional brewing vessel used for making beer, particularly in the production of lambic-style beers, saying that the coolship is also a kind of special beer brewery equipment. It is a large, shallow vessel made of copper or stainless steel and has a wide surface area which allows the hot wort to cool quickly as it is exposed to the open air.


 
A coolship is used in beer brewing for a specific purpose: to cool down the wort quickly and expose it to wild yeast and bacteria from the surrounding environment, which leads to spontaneous fermentation. This process is typically used in the production of traditional Belgian lambic-style beers, but it can also be used for other sour or wild beers.
