Why the false bottom warp and bend after beer brewing?

Recently, we have a new 500L beer brewery project being installed in Canada, and after only several brews, they noted the false bottom inside lauter tun got collapse-deformation (see below photo). So why the false bottom warp and bend like that? After confirmation, we found the reason: They skipped the wort grant during wort lautering. They are definitely not the first one or final one met such problem. So today let us talk about wort grant.
What is wort grant?
The wort grant is a buffer tank being installed between lauter tun and boil kettle. It is widely used in micro brewery equipment within 1500L. The wort grant usually with small capacity saying at 25L or 50L. It plays an important role during beer brewing, especially in wort lautering process.
There are mainly two kind of wort grant being used in current beer brewing industry, the glass wort grant with 25L capacity or the stainless steel wort grant with 50L capacity.
Why we need wort grant for our brewery equipment?
The position of wort grant is usually lower than lauter tun. During wort lautering, the wort could flows into wort grant automatically by gravity, then being pumped back into lauter tun until the wort is clear. Now the wort grant work as buffer as it better avoid a big suction under false bottom which come from pump, and that could better avoid a compacted grain bed and avoid the space under false bottom being vacuumed. You can see, the wort grant actually is protective umbrella of lauter tun and false bottom.
The wort grant inlet with a manual valve usually, which could be used for adjusting the wort flowing speed, then the liquid level inside the wort grant could be kept in a certain range, it is the most ideal condition. Some clients prefer to use needle valve or micro adjust valve here for fine adjusting wort flow. And for the stainless steel wort grant, we usually have two sensors together, high level sensor for command wort pump on and the low level sensor for command wort pump off.
At beginning usage of the new beer brewery equipment, we suggest to open the wort grant, and when you become familiar with the equipment working, then you can try to work without it. All equipment use will have a break-in period :)
