As we all know, beer fermentation needs numbers of yeasts and yeast propagation requires oxygen so that the yeast can propagate efficiently and the beer goes into fermentation quickly. Therefore, we must supply enough oxygen to wort. As the yeasts are able to consume oxygen withing a few hours, it would not affect wort quality.

In order to dissolve oxygen into wort, we must inject very thin and fine oxygen bubble and these oxygen bubble had better be mixed with cold wort in turbulence. Otherwise, the oxygen bubble would overflow from wort and can not dissolve in wort.

The amount of oxygen influence the beer quality deeply. If you inject too much oxygen(more than 12mg/L), yeast would mass propagate. If so, there would be less alcohol in beer and it make beer flavor light. If you inject too little oxygen, the oxygen dissolved is too little accordingly, which will affect yeast propagation and beer fermentation ability.
