Apple Receiving & Preparation

Juice Extraction

Hydraulic Press / Belt Press
Presses apple mash to extract high yields of juice with minimal solids.
Receives and temporarily holds extracted juice before pasteurization or fermentation.
Juice Pasteurization
Jacketed Heating Tank or Plate Pasteurizer
Gently heats juice to 63–75°C to eliminate harmful microorganisms.
Cooling System
Plate Heat Exchanger or Jacketed Cooling Tank
Rapidly cools juice post-pasteurization to 15–20°C for safe yeast pitching.
Fermentation


Temperature Control Unit
