II.Brewing Process of Opaque Beer
1.) Raw Material Preparation
Maize meal and malted grains (barley or sorghum) are mixed with water to form a thick porridge.
2.) Cooking / Gelatinization
The maize porridge is cooked in a pressure cooker with direct steam injection for several hours to gelatinize the starch.
3.) Conversion / Enzymatic Hydrolysis
The cooked mash is transferred to a conversion tank, diluted with water to reach the desired viscosity, and enzymes are added to convert starch into fermentable sugars.
4.) Solid Separation
The mash is pumped to a decanter or centrifuge to remove coarse solids and suspended particles.
5.) Fermentation
The clarified mash is transferred to fermentation tanks with temperature control.
Yeast is added to ferment the sugars into alcohol.
The beer is fermented for 2–5 days until the target alcohol content (around 3–4%) is reached.
6.) Pasteurization
The beer is heated in a pasteurizer to eliminate bacteria and ensure microbial stability.
7.) Cooling and Packaging
The beer is rapidly cooled using a chiller.
Carbon dioxide is used to fill bottles, which are then labeled and packaged.
The process extends shelf life up to 60–90 days.
