How is Beer Fermentation tank design influence on yeast?

Yeast is not only subjected to hydraulic pressure, but also to air pressure. If consider the factor of high concentration CO2, the phenomenon of concentration gradient, the physiological performance of yeast will undoubtedly be greatly affected. In addition, the height of the conical beer fermentation tank is too large, the convection of the fermentation liquid is too strong, and it is easy to form stirring fermentation. Therefore, the height of the liquid level in the tank is an important parameter, which not only affects the composition of fermentation by-products, but also affects the activity and physiological metabolism of yeast. Fermentation Tank height and diameter-height ratio should be determined according to process requirements.


   It has been proved by practice that the maximum liquid level of wort in the conical fermentation tank is 5m; the liquid level of wort in the conical beer fermentation tank can be determined according to the actual situation, because the decomposition of diacetyl in the post-ripening process has been completed, which has little effect on fermentation .
   There are different opinions on the diameter-to-height ratio of the conical tank, generally 1:3~1:5 is appropriate.
