How to deal with gelatinization mash in case of sudden power failure?

This article column is specially to discuss How to deal with gelatinization mash in case of sudden power failure.The production department can make arrangements in advance for the normal power cut and steam shutdown in the production process to avoid unnecessary losses. But sometimes, due to some special reasons, there will be a sudden power outage. On the one hand, we should quickly find out the cause, remove the fault and restore the power supply as soon as possible. On the other hand, we can take the following emergency measures as appropriate.
 
(1) After the power failure, the mixing can not be started and the pump can not be used for transportation. If the mash is not stirred for a long time, it will deposit on the surface of the heating jacket and affect the heating. At this time, the heating steam valve should be turned down, and manpower should be organized to stir with clean wood oars and boards. However, attention should be paid to cut off the power supply of the mixer first, so as to prevent accidents caused by electric power. Another method is to use direct steam heating, that is, use a long pipe with a porous ball at the end and clean steam at one end to insert the porous ball into the mash. When the steam is ejected from the small hole, it not only plays the role of stirring, but also plays the role of heating, until the mash boils. Manual pump or small diesel engine can be used to drive mash pump for mash blending. At the same time, manual stirring is carried out in the mixing area of the saccharification pot, and the wood paddle is used to push the mash to rotate, so as to make the mash temperature as uniform as possible.

(2) In order to prevent the mash from rancidity or starch aging, some emergency measures can be taken.If the mash temperature is below 70 ℃, high temperature water can be added into the gelatinization pot to make the mash temperature rise to 70 ~ 72 ℃ for heat preservation and liquefaction. If bacterial amylase is used as liquefaction enzyme source, some malt powder can be put in appropriately, or a certain amount of malt can be pumped from the saccharification pot to enhance the liquefaction effect, so as to make the mash temperature not lower than 60 ℃ and prevent the occurrence of rancidity. If the mash temperature is 70 ~ 95 ℃, it can continue to keep warm and wait for steam. If the steam is stopped when the temperature is above 95 ℃, the mash can be mixed with malt mash by pumping in the saccharification pot with a little heat preservation.
Although some of the above emergency measures can be taken, it will eventually have a certain impact on the product quality and output, so we should try our best to avoid abnormal power and steam outage in production.
