a.Adding the water.
When the wort level is higher 1-2cm than spent grain thickness surface, then we can do sparge. Otherwise, the air will go into spent grain and produce polyphenol oxidase and polymerization reaction in the function of enzyme, thus influence beer taste. Because when the temperature lower 85℃, the polyphenol oxidase enzyme still have activity.

b.Water temperature.
When do sparge, sparging water temperature about 75℃. When the wort thickness about 5cm above spent grain, increase temperater to 78℃. If the temperature is lower, the sparge wort will muddy. Only continuously sparging or enough water supply, water temperature can raise to 80℃.

c.PH value.
Accompany with sparging, PH value will be higher. If PH value over 6.0, it is not good for filtering, but also influence the components of first wort, further influence the protein cphesion and separate out. So as process demands, the lactic acid need to add to adjust PH value.
