In breweries, carbon dioxide (CO2) serves several important purposes:
 
Carbonation: CO2 is used to carbonate beer, giving it its characteristic fizziness and refreshing mouthfeel. Brewers inject CO2 into beer either during fermentation or before packaging to achieve the desired level of carbonation.
 
Purging: CO2 is used to purge oxygen from tanks, bottles, and kegs during various stages of brewing and packaging. Oxygen can negatively affect the flavor and shelf life of beer, so it's important to minimize its presence as much as possible.

CO2 used in brewery operation 
Pushing: CO2 is used to push beer from storage tanks to bottling or canning lines, as well as from kegs to taps in bars and restaurants. This ensures a smooth flow of beer without exposing it to oxygen, which could compromise its quality.
 
Blanketing: CO2 is sometimes used to create a protective layer over the surface of beer during storage, preventing oxidation and maintaining its freshness.
 
Yeast Propagation: CO2 can also be used in yeast propagation, providing a controlled environment for yeast growth and fermentation.
