What kind of water is suitable for beer brewing?

Water plays an important role in beer’s flavor and quality as basic brewing ingredient. So, no matter you are a green hand to start brewing or experienced brewmaster, it is necessary learn what kind of water is suitable for beer brewing.

1.The water should be colorless and transparent, as well as no suspended and precipitated solids. Otherwise, it will affect clearness of wort and make beer turbid, even produce sediment.

2.The water after heated to 20-50℃, it should taste refreshing, and its smell & flavor is neutral and odorless. If it is salty, bitter and astringent, such water can not be used for beer brewing.

3.The PH of water should be 6.8~7.2. Too low or too high PH would cause mashing difficult, then influence beer flavor.

4.Organic substance in water should not exceed 3mg/L. If it exceeds 10mg/L, it means the water has been polluted seriously.

5.The hardness of water had better be 8°dH or lower for brewing light beer. For dark beer, the hardness can be increased modestly.

6.Ferric content in water should be lower than 0.3mg/L.

7.Total dissolves salts in water should keep between 150mg/L and 200mg/L. Too many salts might have beer tastes rough and bitter. In addition, ammonium salt can not exist in water. Or it reflects the water is not clean. And silicate should be less than 30mg/L. If it exceeds 50mg/L, wort will become unclear and it is easy to form micelle during fermentation.

8.The chloride in water should be 20-60mg/L.

9.The total amount of bacteria and escherichia coli should meet the standard of life drinking water.
