What type of heat exchanger is best for my brewery equipment

At present, the most commonly used wort cooling unit in beer brewery equipment is plate heat exchanger, which is a closed cooling equipment made by stainless steel and consists of multiple thin plates with grooves on both sides. During wort cooling, the hot wort and the cooling medium flow countercurrently along the grooves in the form of turbulent flow through the pump.


 
When the plate heat exchanger is used for wort cooling, there are generally two ways, saying the double-stage heat exchanger and the single-stage heat exchanger. But what type is best for your beer brewery equipment? Today we wanna make some clarifications as below:
 
I. Double stage heat exchanger
 
The double-stage heat exchanger uses two cooling media during wort cooling, the internal structure of this type of plate heat exchanger is a little bit complex. And for corresponding with this type of heat exchanger installation, there are usually more pipeline needed.
 
The cooling medium combinations used in the double-stage cold plate heat exchanger are:
 
_ City water & Glycol water:
It is the most popular combination used by most of our clients who are using two stage heat exchanger. You can  cool down the wort to any fermentation temperature you need. The city water could heat heated up to about 50~ 60 Celsius, and glycol liquid may be raised up to about 7~8 Celsius after wort cooling.
 
_ Cold water & Glycol water:
This combination is mainly used in some brewery located in some area close to the equator. Their city water may with quite high temperature throughout the year, to get a faster wort cooling speed, the first stage could be cold water instead of city water. But now you need spent more money on extra cold water tank.


 
II. Single stage heat exchanger
 
The single-stage plate heat exchanger uses only one cooling medium during wort cooling, which saves many pipes and valves and reduces the cost.
 
The cooling media used in single-stage plate heat exchangers are:
 
_ Cold water:
This medium can cool the wort to about 12°C, which can meet the fermentation temperature of most beers. Absolutely now you must have cold water tank on site, and its capacity better not less than 1.5 times of your wort capacity per batch.
 
_ City water:  
Cooling wort by only city water is not that popularly used by our clients, it just suitable for high fermentation temperature beers. If your local city water usually at quite higher temperature saying at 30 Celsius or more than that, we still suggest to use cold water instead.
