Why are whisky stored in oak barrels?

Whisky is stored in oak barrels for several reasons:
 
Flavor Development: Oak barrels significantly influence the flavor profile of whisky during the aging process. The wood contains various compounds, such as lignin, hemicellulose, and tannins, which interact with the whisky over time. These interactions result in the extraction of flavors and aromas from the oak, contributing to the unique characteristics of the whisky. Oak imparts notes of vanilla, caramel, spice, and sometimes even hints of fruit or smoke, enhancing the complexity and depth of the spirit.
 
Maturation and Mellowing: Whisky undergoes a maturation process while aging in oak barrels. During this period, chemical reactions occur between the whisky and the wood, leading to the development of desirable qualities and the mellowing of harsh flavors. The oak helps to soften the spirit, integrate different flavors, and create a smoother, more refined taste.
 
Color Enhancement: The use of oak barrels also contributes to the color of whisky. As the whisky interacts with the wood, pigments from the oak are extracted, giving the whisky its characteristic amber or golden hue. The longer the whisky ages in the barrel, the deeper the color becomes.
 
Oxygen Interaction: Oak barrels allow for a controlled exchange of oxygen between the whisky and the surrounding environment. This slow oxidation process can influence the flavor profile by helping to remove undesirable compounds and by allowing the whisky to interact with oxygen over time.
