How does CO2 affect the beer quality
During beer maturation, many brewmaster would prefer to fill CO2 into beer to make CO2 reach a saturated condition. Why do we need to fill CO2? How does CO2 affect the beer quality?
Firstly, the CO2 would be dissolved into beer slowly for a long time during secondary fermentation, then make it easier to be absorbed by colloidal substance, combined with some ingredients and become more stable. It is beneficial to form and maintain the beer foam.
Secondly, the CO2 would give beer exciting mouthfeel, which can avoid beer oxidation.
Thirdly, the CO2 could decrease the beer PH to make beer light and fresh. And the beer bitterness would become soft with hops resin separating out.
Fourthly, the dissolved CO2 could avoid beer contaminated.
There is no doubt that CO2 plays an important role for beer flavor. So, we equip special carbonation port and stone on unitank or brite beer tank in order that enough CO2 is dissolved in beer.
