The beer output of your brewery depends on the type and size of brewing equipment, the size and number of fermentation tanks, and the fermentation cycle. An experienced brewer can calculate the brewery capacity better, here are some factors you may already know:
Not All Beers Are Created Equal
Something to consider when calculating a brewery’s annual production is house time. How long beer is kept in cans before it is ready to be packaged? If you’re brewing a lager, it might sit in tanks for 4-6 weeks before it’s ready. The longer your beer fermented in the tank, the less you can brew.
Estimate The Size Of Your Brewery
The best way to estimate brewery system size and cellar configuration is to calculate beer production over a year, as this will allow you to better estimate the number of fermentation tank you will need. How much beer do you plan to brew each year? These are the main questions we ask first after approaching a client.
Brewery Capacity Calculation
For simplicity, we will count 20 days as one fermentation and conditioning cycle, so one year will have 15 fermentation cycle. Here we calculate 10 months production period. Then we will know the annual production capacity according to fermenters capacity.
You can have many types of tanks in your brewing process:

Bright beer tank
Horizontal maturation tank
Serving tanks
Brewhouse combination In A Brewery
The design of the brewery also affects the amount of beer that can be brewed on site.
For a 2 vessel brewhouse, it is possible to brew 2 times a day, but it takes longer time. Some breweries have 5 or 6 vessel systems and can brew more than 6 times a day. In the brewing process, it is not the number of cellar tanks that limits the output of a brewery, but the design of the brewery.
