How to operate CIP system to finish cleaning process in a brewery

The portable CIP cart is designed for cleaning and sterilization of the Brewhouse, Fermentation tanks and Bright beer tank. The CIP system in a brewery has not complex construction, that is composed of two tanks (caustic tank and sterilization tank), one pump, one control cabinet and portable cart. A clean environment is the foundation of beer brewing and fermentation. So the usage of the CIP cart is very important and basal. The brewhouse and fermentation tanks cleaning process basically same between each other.
Take fermentation tanks cleaning with 100L CIP Cart Unit as example:
1. Preparatory work at least one hour ahead of fermentation tank cleaning
Separately fill 100L clean city water into the caustic tank and the sterilization tank.
Then add 3kg food grade caustic soda into the caustic tank to make the concentration of caustic liquid up to 3%. And open the button of heating at the same time.
Then add about 100ml 35% hydrogen peroxide liquid into other tank, that mix the liquid concentration up to 300—400PPm.
2. Cleaning fermentation tank 15mins with city water
A small amount of water but more washing times—washing for 3 times and every time is 5 mins, The remaining water in the tank drain out and then do the next step, keep the discharge port of fermenter open.
3. Caustic washing
Drain out the remaining water in the fermenter, using the prepared hot caustic liquid cycle washing for 15~20 mins (when the concentration of the caustic become lower, more solid caustic need to be added).
When this step is finished, the caustic liquid need to be recycled.( Pay more attention on the protection--It is necessary to wear protective device when operating, and avoid direct contact with caustic liquid.)
4. Washing with city water again.
Washing with clean city water for 15 mins after all the caustic drain out, the cleaning process is same with second step.
5. H2O2(Hydrogen Peroxide Liquid) washing
Drain out the remaining water in the fermenter, then take the prepared H2O2 liquid cycle washing for 15~20 mins. After finish this step, please close all the valve of the fermenter.
