Brewing spirits using a distillery requires several steps and careful attention to detail. Here's a general overview of the process:
Preparation: Before you start, make sure you have all the necessary equipment and ingredients, including a distillation unit, fermenting vessel, yeast, and sugar or other ingredients for the mash. Clean and sanitize your equipment thoroughly to prevent contamination.
Mash preparation: Combine your ingredients in the fermenting vessel and add water to create a mash. Heat the mixture to activate the yeast and allow it to ferment for several days, until it has converted most of the sugar into alcohol.
Distillation: Transfer the fermented mash into the distillation unit and heat it to boiling. The alcohol will vaporize and rise through the column of the distillation unit. As the vapor cools and condenses, it will form a more concentrated spirit, which will collect in a separate container. The first part of the distillate, called the "heads," is discarded, as it contains undesirable compounds. The middle part, or "heart," is the desired spirit, while the last part, called the "tails," is also discarded as it contains too many impurities.
