Micro Beer Brewery Equipment cleaning procedure: Fermenter/Fermentation Tank

In the last 2 article, we introduced the cleaning of beer brewhouse system and heat exchanger that included in complete brewery equipment. Today, let’s check how to clean beer fermenter/fermentation tanks. Beer fermenting need proceeding under aseptic conditions. Cleaning of fermenter need to be serious.
Step 1: Flush fermenter with tap water (to wash off flushable attachments)
Clean standard(Same as standard of cleaning brewhouse system and heat exchanger):
**The flushed water is clear
**No suspended solids in water
**Water has no peculiar smell
**Water without foam
Step 2: Use 2%-4% caustic solution (NaOH solution) for circulating washing for more than 30mins;
Caustic solution temp can be 70C to 100C. For fermenter that exceeding 4000L, caustic solution temp is suggested to be at 50C to avoid negative pressure.
Step 3: Flush all the above systems with warm water until clean
Temperature>47℃
The standard of clean is that the pH of the flushed water is neutral or the pH of the water is similar to the pH of the local water (in some areas, the water may always be weakly alkaline)
Step 4: If necessary, use acid detergent to cycle cleaning for 30min
Pickling is to remove the beer stone that has been on the inner wall of the FV for a long time. The beer stone cannot be seen when the inner wall of the beer fermenter is wet. After drying, we can found that there is a layer of white scale on the inner wall of the FV, which is a beer stone.
Step 5: Flush fermenter with warm water until clean
Temperature>47℃
Step 6: Tank spare
Step 7: Before use, sterilize beer fermenter with 0.5% peracetic acid solution (contact sterilization) or 85-degree hot water (thermal radiation sterilization) for more than 20mins.
