What is anti-wort rinsing in brewery?

In microbrewery, here is a circling pipe under the lauter tun. When it meet difficulty in the lauter process, hot water is pumped into the circling pipe and spray up to the false bottom from the nozzles build on the lauter tun bottom, thus loosing the grain bed. This process is called anti-wort rinsing.

So the functions of the anti-wort rinsing process:
1. It looses and then forms new grain bed thus speed up the filtering.
2. It also happen before the mashing is pumped into the lauter tun to relief the air between
below the false bottom.
3. It also pre-heat the false bottom and the lauter tun to ensure a smooth lauter.


Considering the above aims, we need note below during this operation:
1. The anti-water must be brewing water. The temperature should be 75-78℃. To realize it, a water blending device and temperature meter are needed.
2.The water source used for the water rinsing should be no less than 15Mpa. If the pressure is small, the water won’t be powerful enough to raise the grain bed, but just permeate the grain. The raising function is effected.
3. If the lauter is smooth enough, trying not use anti-wort rinsing, as this process every time will bring more water into the wort, and what’s more, the anti-wort rinsing is nowhere near as uniform as the normal sparging from top. It is not good to the washing out more wort thus effect the efficiency.
4. During the anti-wort rinsing process, when there is water gushed from the surface, it means that the anti-wort rinsing is having a good effect. Normally the rinsing process is 3-5 minutes. You could decide to start the rake or not according to the effect during the rinsing process.
