Kombucha is a low-alcohol fermented beverage made from tea, water, and sugar through fermentation using a SCOBY (Symbiotic Culture of Bacteria and Yeast). During fermentation, yeast converts sugar into alcohol and carbon dioxide, acetic acid bacteria further convert the alcohol into organic acids. The result is a beverage with a balance of sweet and sour flavors and a slight effervescence.
For kombucha fermentation, we can use insulated fermentaion tank or single wall fermentation tank. Then when a single wall fermentation tank is suitable?
- Stable indoor temperature
Fermentation room maintained at 20–30℃
Ideal range is typically 24–28℃
- Small to medium production scale
Microbreweries, startups, pilot batches.
Batch-to-batch consistency requirements are relatively flexible.
- Warm climate locations
Tropical and subtropical regions where ambient temperature remains suitable most of the year.
- Primary fermentation only
Sweet tea + SCOBY fermentation.
No need for cooling during fermentation.
- Low-cost project requirements
Single-wall tanks are less expensive than jacketed tanks.
Lower installation and maintenance costs.

But for conditions below, we need to consider jacketed fermentation tank
* Ambient temperature frequently exceeds 30°C.
* Consistent product quality is required year-round.
* Large fermentation volumes generate significant fermentation heat.
* Commercial production requires precise control of acidity, sugar consumption, and flavor profile.
* The brewery is located in regions with large seasonal temperature fluctuations.
Tiantai, provides turnkey solutions on brewery equipment, winery brewery, distiller equipment, kombucha equipment, cider equipment and other beverage equipment. If you are looking for brewery solution, we are at your disposal anytime.
