How does brewhouse tank MLT work in brewery, especially each phase

To start a brewery, there have many matters need to consider. All brew masters will work out how many batches brew in one day, which has influence to brewhouse combinations. The needed time and labor for one batch brewing also is different. Basically, it can be calculated as below:
MLT + KWT + HLT, we will need 8 hours to brew 1 batch, 12 hours to brew 2 batches.
MT + LT + KWT + HLT or MLT + KT + WT + HLT, we can brew 2 batches in 10 hours.
MT + LT + KT + WT + HLT, we can brew 4 batches in 14 hours.
 
Of course, the brew time also can be influenced by brewing process. So it is critical important to consider customers brewing intention when it comes to a turnkey brewery projects.
 
In most microbreweries, 2 vessel brewhouse MLT + KWT + HLT is popular. They normally brew 1 batch per day. One customer had asked me how does brewhouse tank MLT work, especially each phase? Hope my explanation below will help you, if you are meeting same question when build a brewery.


 
It mainly has 2 situations, with heating function or without heating function.
 
If with heating function, MLT will be heated by steam, we can rise MLT temperature directly (steam jacket welded on interior shell)
There have 2 basic brewing process as well, of course, it relates to your brewing recipe in most degree.
 
For one step mashing:
The malt feeding temperature at around 65℃, and mashing 1 hour for example, then we can heat the temperature to 78℃ for lautering.
 
For multi steps mashing:
The malt feeding temperature at around 45℃, then we heat the temperature to 52℃, 65℃, 78℃, each phase keep mashing 30 minutes for example.
During mashing, we will run grain rake at slow speed, say 25HZ, to assure uniform heating by agitating. After the temperature heated to 78℃, we will stop agitating and rest 15-20 minutes, then we can start wort circulation (vorlauf) and transfer wort to KWT. We also brewed like this.
 
The brewing methods also is related to malt quality, so before purchase the malt, you can confirm further with supplier, and see which brewing method they recommended.
 
If without heating function, it suits for electric heating or gas heating. Only KWT and HLT can be heated.
In this situation, we will finalize brewing by transferring hot water and mix with crushed malt.
For example, if we expect the mash temperature at 45℃, we heat the water in KWT or HLT to 46℃ and then transfer to MLT for mixing. The hot water temperature needs slight higher than needed temperature, as the temperature will drop down after mixed. Then we can heat the water again for next temperature mashing.
