Should we choose steam, direct fire or electric heating for our brewery equipment?

When you plan to build brewery and finalize configuration of brewery equipment with supplier, one important question must be asked, "what kind of heating way will you use for your brewery equipment?". For experienced brewers, this is a simple question since they have rich experience and knowledge to select most suitable heating way for them. But for green hands, they will be confused. Should we choose steam, direct fire or electric heating for our brewery equipment?
Here, let us talk about heating way from different views. Hope it is helpful for you to make decision.
1.Applicability
For pilot and nano brewery (50L-800L), all of heating ways work well.
For micro brewery (1000L-1800L), steam heating and direct fire heating is more suitable. For electric heating, it will consume amount of power during heating, and it gives much higher requirements to electric parts, particularly for air switch. In addition, it might not be very easy to apply for so high electricity load from government.
For commercial brewery (2000L and bigger), we recommend steam heating more. Provided adopting direct fire heating, it needs to agitate timely in order to avoid scorch. With tank's capacity increasing, it becomes more difficult for brewer to guarantee timely agitation with direct fire heating.
2.Heating efficiency
From the view of heating efficiency, steam heating is best since it can heat mash/wort/water pretty more evenly and vigorously, as well as no scorch.
3.Mashing technology
If mash tun and lauter tun combines to one same tank (we often name it Mash/Lauter tun), it can not be heated directly based on electric heating and direct fire heating.
Electric heating-Electric heater would conflict with grain rake inside
Direct fire heating-It heats liquid on bottom, but there is false bottom inside, which would affect heating greatly.
4.Investment to auxiliary machine
For electric heating, it will work as long as we fit electric heater in tank, no any auxiliary machine.
For direct fire heating, it needs to build extra fire chamber and burner on tank's bottom.
For steam heating, it needs to prepare extra steam generator and pipeline.
From this view, steam heating is most expensive, then direct fire heating, then electric heating.
5.Local cost of fuel
The fuel of electric heating is electricity; the fuel of direct fire heating can be natural gas, LPG, diesel; the fuel of steam heating can be electricity, natural gas, LPG, diesel. It is necessary to compare these fuels' cost at your local.
