The difference of single stage and double stage heat exchanger
 
The wort can be cooled by single stage or double stage heat exhanger. And it is normal to use double stage heat exchanger in previous. But considering saving energy and easier operating, more and more breweries prefer to use single stage heat exchanger now. The basic cooling process of heat exchanger as below:
 
Double Stage Heat Exchanger:
- The wort will be cooled by city water or cold water from heat exchanger (first stage), and water temperature below 20℃, after heat exchanging, the wort temperature be cooled down to 40℃ - 50℃. The city water or cold water after exchanging, the temperature rise to around 50℃ - 60℃ and can be recycled. The recycled hot water can be used for sparging or next batch mashing.
- The wort will be cooled by glycol water from heat exchanger (second stage) and down to fermentation temperature. The glycol water temperature around at -3℃~-5℃.
The complete wort cooling process will be finished within 40 minutes, it is good for producing better quality beer.



Single Stage Heat Exchanger
- The wort will be cooled down to fermentation temperature by cold water directly in one stage.
The cold water temperature at 3℃ - 4 ℃. After heat exchanging, the cold water temperature rise to 75℃ - 80 ℃, which can be used for sparging or next batch mashing.


 
The advantages of Single Stage Heat Exchanger
1. The cooling medium with cold water only without glycol water.
2. The brewhouse heating utilize efficiency improved much due to higher hot water temperature reached.
3. Easier operating due to stable cold medium without controlling city water and glycol water at the same time.
4. It helps save energy 30% -40% compare with double stage cooling.
