(1) Low pressure boiling is also called external heating boiling method. The wort is pumped out from the boiling pot, heated to 102-110 ℃ by the heat exchanger under the condition of 0.20-0.25kPa, and then pumped back to the boiling pot, and the cycle can be carried out 7-12 times. The boiling time is about 60~70min, and the boiling temperature can be controlled by the valve at the outlet of the heat exchanger. When the wort is pumped back to the boiling pot, the pressure drops sharply, and the water evaporates quickly to achieve the purpose of wort concentration.
               
(2) Pressurized boiling :This method belongs to the internal heating boiling method, that is, boiling under the pressure of 0.11~0.12MPa, the boiling temperature is 102~110℃, and the maximum can reach 120℃. After adding hops for the first time, open and boil for 10 minutes to remove volatile substances, then seal the pot, make the temperature rise to 104-110 °C within 15 minutes, boil for 15-25 minutes, and then drop to atmospheric pressure within 10-15 minutes, add the second time Hops, boil for 60~70min.
