Wort aeration
As we know,fermentation need lot of yeast,but for the yeast growing,it needs much O2 to make sure the yeast reproduce.So that it must provide enough O2 for the yeast,or that it will delay the yeast reproduce and growing speed.
During the brewing process,in order to make the O2 dissolved in the cold wort,it require the tiny air,and at the same time,it proceeds in the whirlpool type for their dissolving.If the air is too big,it will slip from the wort so that it can’t reach the purpose for wort aeration.
The air rate has much influence on the beer quality.If pump in the air volume is more than 12mg/L,the yeast will reproduce a lot,and then generate less alcohol.If pump in the air volume is less than 6mg/L,the yeast will have influence on the yeast reproduce and fermentation.So it is better to make the wort has about 8-9mg/L O2.
