Kombucha is produced by symbiotic fermentation of sugared tea using a symbiotic culture of bacteria and yeast (SCOBY) commonly called a "mother" or "mushroom". It originated in China, and now has spread to Europe. We had setup many kombucha breweries in New Zealand, United Kingdom etc. Then what is the basic components for kombucha brewery.

1) Brew kettle, with false bottom and agitator. It is used to heat water, mixing sugar and tea by agitator. Some customers also plan to brew cold tea, then we can design the glycol jacket on this tank in order to cool temperature down.
2) Scoby storage tank, also known as aerobic fermentation tank. It is single layer, without glycol jacket, open top without pressure, fermenter in room temperature, fill O2 for aerobic fermentation.
3) Open top fermentation tank. It is double wall with insulation, open top without pressure. The tank will be cooled by glycol. If needed, we also can design the tank with dished top and sealed.
4) Bright beer tank. It is double wal with insulation, dished top with 2 bar working pressure. The design is same like brite tank for beer brewing.
5) Glycol cooling system, it is used to cool fermentation tanks, bright tank, brew kettle etc.
6) CIP system
7) Filtration and filling line etc.
8) Control cabinet for temperature control, agitating.
